    Its always an issue when we entertain to make sure that the dessert meets the needs of the guests and that my dairy allergic child does not feel he is missing out. This recipe meets all needs. Delicious and looks great. I get frustrated when I'm left with egg whites or egg yolks, so I decided to add meringue to this recipe. Nice and crunchy.

    My late dad was a fabulous cook. My mouth waters when I think about his concoctions. He owned a pancake parlour and this is his pancake recipe that he used and that I memorized as a young girl. Fortunately it is dairy free so it works well for my dairy allergic son. My dad insisted that this recipe worked better if the batter aired for at least an hour prior to cooking. The batter can last in the fridge for up to 24 hours. I usually use 2 pans simultaneously to halve the cooking time, so the cooking time specified in this recipe is for the whole batch using 2 pans.

    I cannot seem to find commercial rusks without dairy. Traditionally in South Africa rusks are made with buttermilk. I found and adapted this recipe and my whole family (including the dairy eaters) loves dunking them into coffee especially on Sunday mornings. They're filling & nutritious enough to replace breakfast. Choose a good quality commercial muesli as it affects the taste of the rusks. Rusks make a nice gift. This recipe may seem to be time consuming but it is well worth the effort, and they last for weeks. Adapted from Theresa Verslanking

    Adapted from a recipe in Essentials magazine. These puds are easy to make, delicious, and look impressive. They are dairy-free and I also made a gluten-free batch by substituting the self-raising flour with 1/3 potato starch, 1/3 buckwheat (or chickpea) flour and 1/3 brown rice flour. It is not necessary to add gluten-free baking powder as there is enough bicarbonate of soda.
