    I created this dip last night. My kids love ranch dip with carrots and I wanted to lower the fat and add some additional nutritional value. It turned out great--I am having the leftovers for lunch today. I used Chick peas, but I would think any white bean would work. Next time I will probably do a homemade ranch dip mix to reduce the sodium.

    This chowder is quick and inexpensive. The corn I used is frozen fresh sweet corn from the summer - it is mixed with a little milk, sugar and sale before it is frozen. I am not sure what the equivalent would be so I just used plain frozen corn. You may need to adjust the liquids a bit if you use plain frozen corn. Next time I will had pepper jack cheese when I serve the soup. Canned chipotle peppers would be good as a substitute for green chilies.

    This is the version of porcupine meatballs I grew up with - it is a little different than others I have seen on Zaar in that it has BBQ sauce in the sauce. This is my comfort food. I serve the meatballs on top of mac and cheese and eat it all together. Make a double batch and freeze the extra. I hope you enjoy!
