    SPICY! If you love spicy shrimp dishes, this one is for you. I serve it over rice, but you could have it any way you like. For those who don't like it really spicy, reduce the amount of chipotles. Would be great barbequed and basted with the sauce. Adapted from a magazine clipping. Easily cuts in half for smaller servings.

    This is my recipe for basic stuffed pork chops dressed up with a mushroom-wine sauce. (NOT using cream of 'shroom soup!)     This is my perfect basic recipe for twice baked potatoes. These potatoes are great to make ahead of time. Just refrigerate or freeze until you need them, and reheat in the oven. I prefer sharp cheddar cheese, but you can use whatever you like, but it will change the taste of the recipe. Cook time includes baking the potatoes. Bake a few extra potatoes for extra filling if you like.

    I adapted this recipe from a magazine clipping. A wonderful gratin using kabocha squash. If kabocha is unavailabe to you, you may substiture butternut or pumpkin. And you can substitute different cheese for the fontinella, asiago or gruyere would be good. Delicious and a simple dish, great for family or company. Easily doubles.

    From Cooking Light magazine. I did not make a low fat version, used mayo instead of yogurt as I didnt have any, and full fat sour cream. I also peeled and cubed the potatoes prior to boiling. Great recipe to use up some fresh herbs from your garden. Prep time does not include chilling time.
