This is my favourite appetizer recipe -- because it is so quick and delicious. Less than 3 minutes of work time and 15 minutes of baking time. It's a great one to take to someone's house -- it travels well and can be cooked in the microwave for 4 minutes instead of the oven. I usually use low fat mayonnaise and cream cheese.
That's right -- a lighter version of scalloped potatoes. No cream or cheese but lots of taste. When I make this, I put it in a couple of casseroles, cook it and freeze. An easy side for a quick week night meal.
This recipe is from a WW meeting. I have changed the fruit and pudding flavour for variety (try chocolate pudding and frozen raspberries). Try using it as pie filling in a graham cracker crust. Look for yogurt containing gelatine -- it's thicker.

This recipe is from a Weight Watchers meeting. It is so quick -- I ate it daily when I was on maternity leave with my second son. If I am making it for the week, I just empty the cans into a plastic container and warm up 1 serving in the microwave. I have also made it using frozen corn and mixed vegetables.
