Hats off to Ms. Dreena Burton for this delicious recipe. I've made only a few minor modifications to her "Living Caesar" recipe, and have found that I actually now prefer this vegan version to a traditional caesar. http://www.rawfoodrecipes.com/recipes/living-caesar-salad.html
I've seen it described as unctous, but after reviewing the actual definition
(smooth and greasy in texture or appearance), I think I'd prefer to borrow the term "umami" to describe the attributes lent by the gelatin in this meatloaf mix. Whatever you choose to call it, once you've had it, you'll never want to make a loaf without it!
Was sure it was in the cupboard when I decided to make the recipe, but alas when the carrots where ready for glazing there was no Comfort to be found. Fortunately, my husband has been working on passing the bar, but mostly he stops in :)
No need to soak overnight when using the pressure cooker. These beans are vegetarian, simple, cheap, good eats. Any type of salsa will work, but I prefer El Pato (chiefly because the whole can goes in).
