This recipe was adapted from the "Just Add Water" cookbook by Lauren Chattman. I love risotto but really don't like the clean up! This recipe is foolproof and tastes amazing. My husband and I have already started dreaming up new combinations for this quick and easy dinner. Enjoy!
I found this is the back of Working Mother magazine. It was taken from Tonia George's, "One-Bowl Meals", its was adapted by Kelly Staikpooulos. It was so easy to make and had incredible flavor. My husband thought it was better than some restaurants we've been to!
This recipe is from the "Just Add Water" cookbook by Lauren Chattman. You can make this without the shrimp as a side dish, or add shrimp for a full dinner. The coconut milk adds such great flavor, and it was really easy to make and clean up! The rice soaks up most of the liquid, so if you like it a little saucy, increase the coconut milk and water.
Published in the August 2009 edition of 'Family Fun" magazine. I used whole wheat flour and they tasted great! NOTE: these need to cool for 2 hours!!!
** I added an egg to the crust and topping and it held together much better. It also helps to press the topping into the filling with a spatula.
These enchiladas are amazing! I made this for a themed dinner party and the crowd went wild. They tasted as if we were at a mexican restaurant...without all the grease. It takes a little more time to prepare, but so worth it! NOTE: the first 8 ingredients are for the salsa. NOTE: This is a recipe by Tyler Florence.
I made these for my 10 month old son! i broke it apart into finger food size pieces and he gobbled it up! I plan on trying this with veggies as well! *NOTE: the oats look really dry but are fine after they are pureed. These are best warmed up a little and are more like a bread. The dough looks more like pancake batter.
Still on my quest for foods that my 10 month old will eat! These balls were a hit last night! I also tried baking some of them, but he preferred the mushy consistency!* based on the one star review i attempted this again for my second child. if made with infant formula this works great! be sure to squeeze all the liquid from the zucchini. i also added blueberries to sweeten the taste. if it seems to runny...add more wheat flour to find the right consistency.
