    I great way to start the morning! I make the mini muffins and my toddler gobbles them up! The almond meal adds protein so you don't load up on carbs first thing in the morning! Enjoy!

NOTE: these need to cool for 2 hours!!! ** I added an egg to the crust and topping and it held together much better. It also helps to press the topping into the filling with a spatula.

I also tried baking some of them, but he preferred the mushy consistency!* based on the one star review i attempted this again for my second child. if made with infant formula this works great! be sure to squeeze all the liquid from the zucchini. i also added blueberries to sweeten the taste. if it seems to runny...add more wheat flour to find the right consistency.

    I made these for my 10 month old son! i broke it apart into finger food size pieces and he gobbled it up! I plan on trying this with veggies as well! *NOTE: the oats look really dry but are fine after they are pureed. These are best warmed up a little and are more like a bread.     This recipe is from the "Just Add Water" cookbook by Lauren Chattman. You can make this without the shrimp as a side dish, or add shrimp for a full dinner. The coconut milk adds such great flavor, and it was really easy to make and clean up! The rice soaks up most of the liquid, so if you like it a little saucy, increase the coconut milk and water.
