    These are a sushi-style combination - pancake with smoked salmon and creme fraiche all rolled into a swiss roll. It sounds complicated, but trust is dead easy - even my hubbie can make it! They can also be made in advance. They make a great starter or canape. The recipe is from the BBC's Good Food Christmas 2004 magazine. My hubbie has demanded these every Christmas and regularly in between ever since I got the magazine in 2004. The pancake recipe is also a great one to keep handy for those pancake moments!!

    I have tried other sponge cake recipes and they always flop for me. My mother use to make this when we were kids. She doubled the ingredients and made it in one of those large oven trays that often come with the oven. It never lasted long enough to come out of the tray! As a variation, you could add lemon or orange rind to the mix, or even granadilla seeds.

    This is a firm family favourite. My mother use to make this with surplus milk (even if the milk was a little sour). It gets more firm the cooler it gets - so give it a chance to set once cooked. I don't think that it needs custard or cream or ice cream with it...besides you won't just want 1 helping!!!
