    This recipe is an adaptation of Chef de Roche's Aloo Talkari (Recipe #219986), which uses curry. The recipe sounded so good, except for the curry which I don't care for, so I modified it. The resulting dish was yummy and full of flavor. With her gracious permission and encouragement, I am posting this adaptation.

    Lately I've seen a lot of recipes that call for grill seasoning. Besides the cost (nearly $5 for a bottle), it's chock full of MSG and other nasties. Taking a tip from Rachael Ray, I've made my own and use it for anything I'm grilling or want to give a grilled taste to. UPDATE: Monstr pointed out there's no MSG in McCormick's grill seasoning. There is, however, hydrogenated oil in it, and MSG can be found in other brands. So read your labels, and if MSG, hydrogenaged oils or the price tag bother you, mixing your own is the way to go.

    This is a quick and easy meal that's ideal for lunch, a picnic, or a light dinner. When my daughter and I first started making these, we were able to find large pita rounds in the grocery store. Nowadays I'm only able to find small rounds which don't roll into wraps nearly as well, so we use pockets. Either way, this is a nutritious and delicious meal!

    Making your own vegetable stock is easy and costs almost nothing. Use the trimmings from your vegetables, including onion skins, garlic skins, herb stems, potato and carrot peelings--just about anything in your kitchen except sulfurous vegetables such as broccoli, cauliflower and cabbage. Also toss in anything in your fridge that looks like it's not so happy any more. This recipe uses a reduction method that produces a very rich stock, which increases the cooking time. You can do this in a third of the time by doing only 1 reduction, which takes about 45 minutes to an hour cooking time. But I highly recommend reducing 3 times.

    This is THE best recipe in my collection. Whenever I make this, the house smells so good, everyone wants to stay for dinner. When I take leftovers to work and heat them in the microwave, the lunch room smells delicious and everybody wants what I have. Sometimes I smell this dish when it's been over a week since I've made it, which means I must drop everything and make it! Sometimes I can smell this when I'm making something else.     These bunless burgers are bursting with flavor. The recipe calls for sage and thyme, but poultry seasoning works just as well. Substitute a tablespoon of poultry seasoning for the sage and thyme. Also, I used a serrano pepper in mine, but if you don't care for the zip, you can omit it without affecting the overall taste of these burgers. Since these burgers have an Asian flavor happening, they work well served with fresh steamed or stir-fried veggies.
