    This is a great way to slip healthy spinach and flax seed meal into your loved one's diet. It is healthy and satisfying and you will benefit from the probiotics (yogurt), antioxidants (berries), omega-3's and fiber (flax meal), potassium (banana) and the numerous benefits of spinach (to name a few - vitamin K, A, C, B2, B6, E, folate, iron, calcium, potassium & fiber). Also by combining the berries (Vitamin C) with the spinach (iron) you are allowing for more absorption of iron from the spinach (http://en.wikipedia.org/wiki/Spinach). I have this about an hour before my morning workout.

    I posted this for those of you who are health conscious, but do crave soda once and awhile. No high fructose corn syrup or artificial sweeteners in this drink! I use Juicy Juice 100% fruit juice. I like to drop in fresh cherries and by the time I'm done with the soda they are soft and come right off the pits! (You can also add white wine to this to make it a nice wine cooler.)

    Finally, a gluten free cereal that is high in fiber, tasty and doesn't cost you $5 a box! This is wonderfully satisfying, similar to All-Bran or Fiber-One cereals, and very easy to make! I created this recipe by modifying a bran flakes recipe I found online so that it would be gluten free (original recipe by Homemaking booket, Mormon Church, 1978 - found at astray.com). Be warned, you don't need to eat much to be full with this cereal (roll it as thin as you can)! NOTE: I am still working on perfecting this recipe (so there may be updates), but just had to share with my fellow celiacs!

    These lacy Italian Cookies are thin and crispy and are made with almonds with a sweet hint of orange. They freeze very well and are delicious sandwiched with dark chocolate or even crumbled over vanilla ice cream. They make great holiday gifts. This recipe is from Giada De Laurentiis on the Food Network and has been modified slightly to be gluten free. (Use regular flour if you prefer not to make them gluten free.)

    This is a Bolivian Dish that I learned from my good friend's mom. I am posting the entire meal since I think everything goes so well together. I have provided preparation steps below that you can do the day beforehand to help cut down on time spent cooking the day of. I recommend going to a latino market for the meat if possible. Tell them you want "carne por milanesas, mas suave" and it will be well worth it. I make Recipe #287183 with the leftover salsa the next day.

    This is from a Pennsylvania Dutch Cookbook. I used to make this as a little girl in my mom's iron skillet. I made it with a very good friend of mine and she still talks about these today.     This is an old recipe that my Gramps used to make (Great Grandpa). The cookies are not really sweet, but the flavor is wonderful all the same. It's definitely more of an adult cookie. I am guessing on the servings, so please let me know how many cookies it makes and I will post the correction. (I can't make them anymore with regular wheat flour since I have to make everything gluten free) UPDATE: I asked my mom if she ever substituted anything for the brandy and she said she rarely included it and just increased the vanilla to a tsp.

    This recipe creates a creamy flavorful sauce using creamed soups, mexican cheese, green chilies and a delicious blend of spices. It is scooped out in squares like lasagna, topped with sour cream and eaten almost like a dip with tortilla chips (Recipe #263512). I definitely recommend making this recipe without substitutions the first time, especially in the case of the flour tortillas. They have a doughy melt-in-your-mouth texture that corn tortillas just don't have. My husband came up with this recipe and has been making it for years. The presentation may not be gorgeous, but it is always a hit and leftovers certainly don't last long! Tools Needed: 13x9-inch glass baking dish, aluminum foil, non-stick cooking spray. (I make this dish gluten free by using homemade gluten free soups - recipe #340988 and tortillas).

    This dessert has a wonderful blend of sweet, tart and creamy and is made with fat-free yogurt, cool whip, cookies, strawberry JELL-O and strawberries. It is utterly guiltless and bright pink color is delightful! This is a slightly modified recipe from kraftfoods.com. I use Recipe #240945 for the fat-free cookies (gluten free!) but don't refrigerate the dough so they come out softer. Feel free to use reduced fat Oreos or other cookies and have fun trying different types of fruit, gelatin and yogurt!

    Homemade pasta is as easy as mix, roll out, slice and boil. There is no drying involved. Simply boil for 5 minutes or freeze the fresh dough for later use. Enjoy spaghetti, fettuccine, lasagna and even manicotti. This is one of Bette Hagman's fantastic recipes from her book "The Gluten-Free Gourmet Cooks Fast and Healthy." (TIP: Mix up 9 cups of the flour mixture ahead of time so you always have it on hand and can whip this up in only 20 minutes. Mix flours in a large bowl using a wire whisk, then transfer to a storage container.)

    This is a Filipino dish I learned from my mother-in-law. I love this recipe because you only need garlic, soy sauce & vinegar (no oil!) and in 30 mins you have wonderfully flavored chicken. As mentioned in a review, it is salty so the Filipino's eat small bites of chicken with lots of rice and veggies (pancit works very well). It certainly helps stretch your chicken. If you can't have gluten in your diet, this is certainly a recipe to try as long as you use wheat free soy sauce (La Choy works great!).

    Close your eyes and this is pretty much the real thing! And you thought you'd never be able to eat Outback's bread again! This copy cat recipe is based off of recipe #25456 and converted to a gluten free version. I recommend eating within 1 week. I used two mini loaf pans and one regular sized loaf pan only because I don't have more minis. (you can add food coloring to get the dark color too, but I figured I'd just keep it natural and close my eyes!) Nutritional Information (including flours, etc): 123 Cal, 2.3 Fat, 1 Sat Fat, 22 Carbs, 1.8g Fiber, 7g Sugar, 3g protein. (Slightly over 2 points a slice with WW)

    My mom learned how to make this from a local of Guadalajara Mexico. It is very simple to make and quite delicious! It's always a big hit when I have guests over. Great for a margherita party! Serve with tortilla chips (try recipe #263512). Out of necessity, I have omitted the tomatoes and it still tastes great. I have also added a few tbsps of fresh chopped cilantro when I have it on hand.

    These muffins have a distinct flavor due to the blend of spices and orange zest. I based the spices off of a recipe for spice cake, since that is what I was craving at the time. The wonderful thing about these muffins is though they do take some time to make, they are filled with nutrients from the veggies and fruits and they don’t have the high sugar or fat content of most muffins. Since the nutrition info doesn't include the flours, I did my own calculation - 119 cal, 2.5 fat, 21 carbs, 1.8 fiber, 5.4 sugar, 2.7 protein. (only 2 points with weight watchers!) These also work great in mini loaf pans. Simply increase the baking time to 45 minutes, or until a fork inserted in the center comes out clean.
