Maccheroni e Melanzane
This is a pasta dish that is served in Sicilian homes and home-style restaurants, rather than upscale places. The recipe calls for perciatelli or bucatini, which is what Italians consider maccheroni.
Zeppole are fried "puffs" that should be so light you might expect them to float away. This particular version comes from Naples, Italy. There are many zeppole recipes – often they are more breadlike.
This sauce is delicious. I taste for seasonings by dipping some crusty Italian bread. My wife hates when I do that.
I made this with a chuck roast and it came great. I cooked it for 3 hours.
Serve with pasta.

Because this sauce is so light, we find that each person should be served 1 1/2 small cutlets. Serve the cutlets and sauce on a single platter and let each person help himself.
