I have enjoyed scrambled eggs for Sunday morning breakfast, but when the doctor found my cholesterol slightly elevated I thought I'd better re-think my Sunday treat. And this is it.     An easy chicken meal with 7 pts per serve. I found the juice was quite runny an would suggest stirring through a couple of tsps of cornflour 30 minutes before serving.

"Studded with nuts, oats, berries and dates, and drizzled with a little maple or agave syrup, these wholesome muffins make for a delicious breakfast on the run or a nourishing morning snack. Enjoy them fresh from the oven with a cup of tea, bake a batch on the weekend in readiness for the week's school lunchboxes or whip them up the night before a busy day." The recipe says it makes 6 muffins, but I would suggest making 12 smaller ones and probably not cooking them for quite so long. Check them after 25 minutes for doneness and if necessary cook a little longer.

    This is from a website on the worlds healthiest foods which is run by the George Mateljan Foundation. I made this last night and must say it is absolutely delicious. The notes say to serve it with Kale, but I didn't have any, so served it with lightly sauteed cabbage instead. Worked really well. I soaked and cooked my own garbazo beans and lentils rather than use canned. I think Americans call tomato sauce what we call tomato puree or plain crushed tomatoes, so I used tomato pasta sauce rather than the tomato sauce we down-under put on sausages and hamburgers. Do not leave out the raisins. These soak up the juices and become lovely sweet bursts of flavour.

    Found on the "Simply Recipes" website. An excellent salad for summer time or a pot-luck. Cooking time is chilling time. I didn't have cilantro so used parsley instead. Also didn't have quite the required amount of corn, but it all tasted very nice. Chilled it for about an hour before serving.

    From the cookbook, "Family Food for the Heart", which was published by the National Heart Foundation of NZ. I found this a tasty and simple way to include a healthy seafood in our diet. This mixture is a suitable filling for Filo pastry parcels, jacket potatoes, or pile onto pasta, rice, pancakes or pita bread. I usually put it into Filo parcels
