Every time I go to a cafe I see the most amazing looking roast vegetable Panini’s but with my partner and I being vegan we needed one without cheese. After searching for a recipe here I decided to collaborated a few vegetable recipes and put them into a Panini with so avocado and relish.
For the mushroom I used Recipe #90712
For the capsicum I used Recipe #18589
Having fruit absent from my diet for the last 17 years and recently becoming vegan I found this recipe to ease myself into the world of fruit. My gosh i have to refrain from eating them all. Please note you can use any dried fruit pieces or nuts and they are both totally optional just makes them a little sweeter.
Great with tea or hot chocolate
After finding that nowhere in New Zealand has vegan parmesan in stock I decided to make my own and it tastes great! Just only use when serving or for ingredients. If it's left on a moist dish as a garnish it tends to make the yeast soggy.
Hi there i used to make this for my partner before we became vegan the gnocchi and parmesan are the only parts which prevents us from eating it. Funny that! I also put raw sugar on the onion, my partner gets a sore tummy and it seems to dull it down and make it sweet
