This is excellent in low-carb taco shells or tortillas for enchiladas. The author even recommends it in a bowl, topped with sour cream.

I ALWAYS follow recipes. I've never felt confident enough to make my own - until this one. Lo-carb is the only diet that I can make work, so all of these ingredients came together in my head to make a new supper. Since making it, I see similar ones here. I don't think this is revolutionary for Food.com - but it was for me! Even my husband, a meat-and-potatoes, hate-new-experiments kinda guy, loved it! (He said I needed to submit it!)
From "Low-Carbing Among Friends". Author says 1 serving has 6 g net carbs. She also suggests using the peeled potatoes to make scalloped potato casserole or mashed potatoes for family/friends not on a low-carb diet.

They were a crispy golden brown - my husband ate his as a sandwich - mine was alone, with a green vegetable on the side. Fantastic! The author recommends experimenting with various salad dressing mixes, I'll try Italian next.
This recipe is so simple, my husband makes it often. The meat is wonderfully moist, and the skin is flavorful, crispy and golden.
I have real success with Lo-Carb dieting, so am always looking for good recipes. Dana Carpender's cookbooks are fantastic and meals at our house includes many of her recipes.
This recipe from Dana Carpenter, 500 Low-Carb Recipes allows me to enjoy BBQ while staying true to a lo-carb diet. It thickens up nicely, has great flavor and stores well in the refrigerator. Dana Carpender says 2 Tbsp serving has 3 gr carbs, 1 gr fiber for 2 grs usable carbs.
I love dill pickles and these are the most flavorful and crisp pickles I've ever tasted! This recipe comes from my best friend's mother. Eliza and her sisters made these pickles year after year... I can see why. (I make one entire jar of pickled onions - they are great in relish trays!)

One of the joys of lo-carb dieting, is eating a salad with more than a forkful of salad dressing! This recipe is a nice change from Ranch & Blue Cheese dressings. It's another of Dana Carpendar's recipes from her Low-Carb cookbooks.
I first made this because it sounded so unique. But I'll make it again and again because it's so full of flavor! My meat-and-potatoes husband doesn't like it, but I guess that leaves more for me! The recipe calls for unsweetened coconut, but I haven't been able to find it, so I just used a little less of the sweetened.
