    These are wonderful and are almost too healthy to be true. Lots of calcium, protein, fiber, etc. I usually eat them without any topping and just keep popping them in my mouth! Yum. But a good jam will do them nicely as well.

    These are "silver dollar" style pancakes. I don't like sweets, so I eat them as-is, without any syrup, etc. They are very light and I usually make tons of tiny pancakes, ending up with a huge stack. If they are getting too dark by the time they bubble, then the pan is too hot, and vice versa. If you use the buttermilk, substitute one teaspoon of baking soda for one of the teaspoons of baking powder (using 1 teaspoon each).

    i came up with this recipe as a healthy snack that is very tasty and portable. the patties freeze well and reheat quickly in the microwave, so i often make extra batches to freeze. you can eat them in a sandwich, or just as is, with your fingers!
