    This is a very tasty recipe for the dry lentils available from the supermarket. I got the original from the 1972 edition of "An Invitation to Indian Cooking" by Madhur Jaffrey, a cookbook that I highly recommend for very satisfying recipes. I have modified it so that it has less fat. I use one tablespoonful here. If you want to use no oil, you could just dry roast the cumin seeds and leave out the asafetida. The seasoning is very mild; you can pump it up by adding more ginger, pepper, cayenne and turmeric.

    The original recipe comes from Paula Wolfert's Mediterranean Grains and Greens cookbook. I have modified it so that it uses no oil. I have to watch my food budget, so I also use supermarket lentils instead of the imported ones, and bottled lemon juice instead of freshly squeezed. You can, of course, use Spanish pardina or Indian, Egyptian or Ethiopian lentils if you like, as well as freshly squeezed lemon juice. The Tuscan kale is very good with this dish, and you could add arugula, watercress or beet greens to the soup. This is a very light, savory and tasty soup that is much better tasting on the second day.

    The original recipe is more complicated and is posted on Dr. Dean Ornish's Web MD website as Linguini with Roasted Red Peppers and Herbed Tomato Sauce. I modified it to use fresh tomatoes from the farmers market and jarred roasted red peppers (from my Dollar Store). This is a very light spaghetti sauce with a very fresh taste. Sun dried tomatoes can be used for a more intense tomato taste and four freshly roasted red peppers can be substituted if the bottled ones are unavailable. Soy meat alternatives could also be added.

    The original recipe came from Martha Rose Shulman's cookbook Provencal Light, a collection of southern France lowfat recipes. I modified it so that it has no fat, and added white beans to the recipe to complete the protein. This soup is slightly sweet and very tasty.
