Swirl of red, green, yellow, and white like the colors of the dancer's skirts. Feel free to replace the tomatoes with whatever seasonal vegetables you have on hand. Part of the garnish is megis. Migas is rough chopped bread-crumbs from stale bread, then fried in oil and drained on paper towel.
A favorite from the Westport Room in Kansas City, this dish was created by Chef Joseph Amberd A fifteen-year veteran with Fred Harvey, Amherd had many fans, including President Truman's daughter Margaret silent-film star Gorrine Griffith, Washington Redskins owner Preston Marshall, and Kansas City Club manager H J Fawcett
A great recipe that you can play with. I like to make mine with Fall/winter root vegetables but you can play with that. Not the fastest thing to make, but a wonderful comfort dish when you are having special friends or the family together. Let me know how it worked out for you
