I adjusted another recipe on the fly last night and came up with this DELISH dinner! The curry powder gives it just a hint of flavor -- it's not overwhelming. And the honey makes it delectably -- but not overly -- sweet.
I wanted to bring sweet potatoes to work for lunch, but didn't want plain old potatoes cooked in the microwave. So I threw this together. Would be good hot or cold. The recipe should make a hearty lunch for two (or three?) -- or serve as a side dish. I used chickpeas but black or pinto beans would probably be just as good.
I whipped these up for our 4th of July party.....my friends dubbed them "Man Scones." Man, woman or child -- they'll all eat 'em up! Easy and delicious! I plan on experimenting with other ingredients. Great as a party food....for brunch....breakfast....whenever!
Made this for some friends in the middle of the night -- they couldn't believe I could whip up a midnight snack so quickly! Feel free to throw other veggies on top. The Bisquick dough doesn't make a true pizza crust -- but it sure is satisfying. A quick fix!
