    This is an awesome summer salad. The mix of the ingredients may seem odd, but I promise you everyone I have served it to has loved it. Hopefully you will, too. The Mango gives just enough sweetness to the dish, and the many textures and flavors work well together. You may adjust the amounts to your liking. I tend to like more fruit and cilantro with less rice.

    Using buffalo meat in chili reminds us that this is the quintessential food of the American West. Leaner than beef, buffalo provides a robust flavor that stands up well to the spices and chilies in this rustic chili. It is widely available now in grocery stores, and only a bit higher in cost, In Houston it is about $4.50 lb. vs $3.99 lb for its lean and naturally raised beef equivalent. If you're like me, you look for meat from animals that are free roaming, fed veggie diets, and are NEVER treated with hormones of any kind. This recipe is for those that like their chili HOT, but you can cut the heat by using either/or for the peppers. Also to cut prep time, I used a presliced tri color pepper and onion medley intended for fajitas found in my convenience/produce case. I also had the meat already cooked and thawed from my freezer.

    This is good comfort food "kicked up a notch". The directions appear lengthy, but not really difficult. This recipe is also very flexible; you can modify it to whatever your taste is. It can be "stick-to-your-ribs" with bacon and sour cream additions, or it can be elegant with white wine and fresh parsley. It has been in my family for some time, but never really written down. But this is a good "wing-it" kind of dish. Have fun with it!

    I had a taste of something similar to this off a salad bar and had to copy it. I call it the Holy Trinity Salad because it features an updated version of the cooks Holy Trinity (carrot, onion, celery) by fusing with West Coast and Asian flavors – carrot, red/yellow bell pepper, and green onion.     I saw a version of this recipe in SL originally. This appetizer is super simple, and very impressive. I adapted it to a more subtle taste, and to give considerable contrast. The original spices took away from the wonderful flavor of ripe roma tomatoes. I think the contrast of bright red tomatoes, and white cream cheese is pleasing to the eye; and the contrast in flavors between sweet ripe roma's, and garlicky cream cheese spread is fun for your mouth. Also the contrast in textures works well.
