I had a chuck roast and didn't want to make the usual stew, so after looking at a lot of recipes, I decided to try this for a Mexican meal. I have used this meat for a number of dishes (most favorite is tacos, also burritos and topped nachos with it) I think it is far superior to using ground beef.
This was my neighbors mother's recipe (my adopted grandmother) I found it after my mother died, tucked away, and thought I had hit pay dirt (this was my favorite chicken pie growing up!) It's a little time consuming but the best I have ever had! She was the by far the classiest Southern lady you ever wanted to meet. (BTW, I have never had a Southern Chicken Pie that contained veggies... it's always just a pure chicken delight!)
Beef Wellington is my absolute favorite dish, but when I went home for a visit, a dear friend made this for us (and he is the one who got me addicted to Beef Wellington) It is out of this world and great for company.
This is the easiest casserole to put together when you are pressed for time and tastes wonderful. This was my neighbor's grandmothers recipe (who owned RC Cola, if anyone remembers that!) so it is a very old recipe, yet still one of my favorites.
I thought I had tasted every wonderful Bloody Mary mix out there until I tried this one. Didn't even know what Dill Sauce was until I made this, but they actually sell it in the condiment isle. You have to try it--so spicy and so good!
