    I love jicama dipped in creamy vegetable dip, and thought Why Not just make the crispy jicama part of the creamy dip? It is So Good this way and couldn't be easier. Serve the dip with fresh veggie spears or spread on crackers. Oh Yum!

    Plate up a palette of pretty colours. Rich orange grilled salmon, raspberry red borscht sauce, bright white crème fraiche, deep green dill sprigs. A dish that will delight your taste buds as well as your eyes. Lovely served with fresh steamed haricots verts and lemon rice. The recipe makes 8 servings. But do not worry if you are cooking for 2 or 4. Any unused borscht sauce is easily thinned to soup consistency and very flavourful the next day. I created this diabetic-friendly recipe with "light" and "sugar-free" ingredients for RSC #12. The shake can also be made using "regular" versions of the ingredients. We like it best that way!

    A creamy & refreshing summertime dessert you are sure to enjoy! It would be lovely served at a bridal shower. Individual servings are very pretty presented with whipped cream and a little pineapple ice cream topping. While creating this RSC #12 Contest entry, my objective was to come up with something like an orange creamsicle only made with the combination of pineapple and vanilla flavors. Frozen Pineapple Dream was the deliciously addicting result. I kept this dessert tightly covered in the freezer and ready to serve at a moment's notice. That way we had many opportunities to enjoy the recipe!

    These oh so tasty buttermilk pancakes are filled with diced bananas and griddled until golden brown. We enjoyed them with butter and maple syrup. You could serve them lightly dusted with powdered sugar then topped with whipped cream and banana slices. This recipe is simple, quick, and one you will want to make again and again!
