This is a truly melt-in-your mouth delicious recipe that will please everyone; especially those who are gluten free. It is very easy to prepare but, is best made a day ahead of serving. Perfect for fall entertaining or for Thanksgiving and Christmas. I made it for my book group last night and it was a huge success. I cut and plated each piece and then added the garnishes. You may also just use toasted coconut instead of the coconut and brown sugar mix, but I love the mix. You will have leftover coconut/sugar mix and this keeps very well in the freezer. Use it over ice cream, over fruit, etc. Adapted from a recipe in Good Housekeeping.

    Recipe #439560

A wonderful summertime cocktail made with iced tea, lemonade and vodka. Refreshing sipping! From July 2009 Bon Appetit. I add a bit more vodka than calls for, but I served this at a party the other night and it was a big hit. I also used decaffeinated tea bags as I try not to drink too much caffeine.

    Recipe #376367

A delicious and refreshing way enjoy ripe summer cantaloupe and fresh garden mint.

    Recipe #376200

A wonderfully refreshing way to marinate chicken for kabobs. We have served these several times and they always get rave reviews from our friends. Using fresh ingredients is the key! I use assorted vegetables like bell peppers, red onion, mushrooms, and cherry tomaotes on the kabobs with the chicken.

    Recipe #376198

A slushy, yummy, easy version of a margarita.

    Recipe #375995

This recipe is from the Neiman Marcus cookbook, Pure and Simple. It was served in their Dallas store. Not low calorie, but so yummy! Great on a cold winter day or for a super bowl party. This calls for fried tortilla strips, but when I'm in a time crunch I just serve with tortilla chips.

    Recipe #281149

This was a grand prize winner in a recipe contest cookbook I found. It is yummy and a great substitute for potato casserole. It can easily be made ahead. It goes well with beef, pork, chicken and fish. I have made this many times and it always gets rave reviews.

    Recipe #280542

A yummy sweet potato casserole with a coconut twist.
