This is an old family recipe. When my Grandmother (b. 1885) made it she would use red, unpeeled, apples, cooked the first 30 minutes and then let them sit overnight. Then run them through a colander. This gives the Apple Butter a wonderful rich color. This Apple Butter is great when used with my Apple Butter Doughnut recipe.
This is a lot like Hostess cupcakes. It is fun to see the surprise on faces when they bite into one for the first time. I get many requests for this. I found this recipe in the St Peters Lutheran Church of Columbus , IN, cookbook.
Spring is almost here and blooming violets will soon follow - for only a short time. This is a great activity to do with the kids since they are closer to the ground for picking the blossoms. Be sure that the flowers are from a natural area and have not been sprayed. The juice is a beautiful color of blue until the lemon juice is added then a "magical" color change occurs and it becomes a hot pink color. This is a beautiful, delicious jelly. And a good excuse to be outdoors!
