    This is probably one of the best if not the best vegetarian chilies we have had. The toppings are a must use as they add a nice layer of flavor. I loved all the flavors in this delightful chili and DH loved that it was not a hot chili. Big thanks to the kitchen treaty blog which is where this delicious chili recipes comes from.

    This Latin flavored soup is so flexible that it can easily be made vegan and the garnishes and spice can be increased or decreased depending on your taste. This is a nice thick soup if you like your soup thinner increase the liquid using equal amounts of stock and milk. To save time the sweet potato can be baked the night before when you are making dinner.     **update 01/14/2014 I have made this twice and both the first time it turned out perfect the second time I doubled the recipe, baking both loafs at the same time both took longer to get done and even thought the tooth pick came out clean the bread looked and acted a bit under done. Be forward that this is very dense and moist bread that may require some additional cook time** This interesting sounding bread was described by gimme some oven (which is also were it comes from) truly, this pumpkin beer bread recipe highlights the best parts of both pumpkin bread and beer bread. The bread was nice and tangy from the yeast, and perfectly buttery and chewy — like beer bread. But then the bread also had a nice subtle hint of pumpkin, with a few little spices — like pumpkin bread. The best thing, though, is that it is not overly sweet, like many pumpkin breads.     A cool and tasty lunch that can be a little tricky to eat unless you buy a skinny cucumber or cut the finished sandwich into slice, I saw a photo on pinterest of a sandwich using cucumber instead of bread. Well the first try tasted good but was very had to eat because I had used a normal size cucumber and in the end cut it into bite size rounds. My second attempt was much better because I found a nice thin cucumber. I used Laughing Cow 50% less fat cheese 35 calories a wedge and 99% fat free turkey 60 calories making this not only low carb but also low fat and low cal :)

    A easy Gremolata that we enjoy on grilled lamb and pork as well as on grilled veggies. We like to smoke eggplant than sprinkle with it a little feta cheese and top it off with this Gremolata. I usually make a double batch as my family likes to us a lot. We have also enjoyed this on Raviolis. 10 minute rest time not included.

    This is another quick, cool and healthy summer treat that is low fat and dairy free. I like to break my over ripe bananas into chucks before freezing them so that they are ready to go when making banana bread or ice cream. The prep time will depend on your food processer, mine only takes about 2 - 4 minutes, bananas should be frozen sold (like overnight).

    A Japanese style meal that is tasty and economical, consisting of chicken that marinates while it cooks, BBQ black eyed peas with no BBQ required and a warm Japanese style slaw that has just a tiny bit of tang. Please do not let the list of ingredients scare you off as they are mostly pantry staples. The number of steps looks like there is a lot of work involved but once the chicken and beans are cooking you will have time to wipe down the kitchen or even write a recipe as the slaw does not get made till just 10 minutes before the chicken is done.**Do Not overcook slaw as it should be crispy tender**

    Was looking for a low fat and healthy way to fix Collard greens that DH would eat as all the low fat version we had tried always left him saying its ok although a bit too spice. This recipe has a very slight sweet under tone which I believe comes from the sweet onion and the Sriracha chili sauce.
