    This is a great way to make fish. This will work with any dense fish like salmon or mahi mahi or even tuna. I like to do this in the winter when I can't get to my snow covered grill. A great wine to pair with this is a pinot noir--I'm partial to Schug.

    This recipe might sound strange... who ever thought of using mayo on a grilled cheese instead of butter?? Try it, you'll see. It makes a great crunch on the bread. And you can use fat free mayo... I don't think fat free butter exists. I haven't found a cheese I don't like with this sanwich. You can also switch up the meat.

    I could eat this stuff by the bucket load!! It’s spicy and sweet and is the perfect match for fish or chicken. This is a great summer recipe and its super easy. This recipe makes enough for 4 adults as a side dish. To make it super fruity, you could add pineapple chunks to the rice toward the end. For extra flavor, substitute chicken broth for the water.

    A wonderful way to kick off the winter season. This is a family favorite. You could top this with either a white sauce or a red sauce... both work very well. This recipe can easily be doubled. I like to make this on a Sunday night and let it sit overnight and then I don't have to cook on a Monday!

    This is one of my favorite pasta dishes. I don't make pasta very often, but whe, I do, I load it up with veggies to cut down on the guilt. I used a boneless pork loin roast but any cut will probably do. At the end, take some of the liquid and make a home made gravy to complete it. Then all you need is a loaf of crusty bread and VIOLA!!!     These burritos were made with left over pork we had from a pig roast. The meat was roasted over an open fire at low heat for 10 hours, so it was smoky and fantastic, but you could use any kind of pulled pork.     This recipe works best in the food processor. I find that this recipe is grainy if you use roasted red peppers from a jar. This dip goes well with tortilla chips, raw vegetables, or even as a replacement for mayonnaise on your favorite sandwich. Every time I make this, at least 1 person asks for the recipe!
