    I got a pop over pan for Christmas. Wow, I can't belive I didn't have one sooner!! This makes a dramatic addition to any meal. They are light and airy. You can also use a muffin tin but only pour batter in every other cup. Also, do NOT open the oven during cooking or you will lose the steam.... and the POP! The batter can be made the night before. I made these with cheddar, chive and slalmi but you could use just about anyhthing you want.....

    Quite possibly the best cookie I have ever made..... EVER and the easiest! They were chewy and delicious. The plate of cookies didn't last 2 hours. I used a pastry bag to get these on to the cookie sheet, but you could use a plastic bag and cut the corner off if you don't have one.

    This is one of my favorite pasta dishes. I don't make pasta very often, but whe, I do, I load it up with veggies to cut down on the guilt.     What do you do with 4 slices of leftover prociutto?? I'll tell you... you make breakfast! What an easy and delicious breakfast treat. This will TRULY impress house guests, but can be made on the fly. I made these in a regular size muffin tin, not mini muffins! When you line the muffin tins with the prociutto, it doesn't have to be perfect... the meat will crisp up and hold its shape, so removal is easy!

    Simply delicious! This is a recipe from my grandmother's friend Betty Russo. she is the most amazing baker and I LOVE when she comes to visit. Betty always leaves me begging for the recipe..... and then about a week later.. the recipe arrives in the mail. This is a simple cookie.     This is a fantastic and simple way to prepare asparagus! I don't think I will ever go back to just plain steamed asparagus. Prociutto is expensive, but this recipe doesn't use very much. And its TOTALLY worth the expense. This could be a fantastic first course or a side dish

    I put this in the crock pot before work sometimes. Its nice to know there is a hot meal waiting for you at home. After a busy day, its a welcome treat! I used a boneless pork loin roast but any cut will probably do. At the end, take some of the liquid and make a home made gravy to complete it. Then all you need is a loaf of crusty bread and VIOLA!!!
