    This is one of our favorite crock pot soups. It's very quick to assemble and very tasty with some crusty bread on a cold and rainy day. It is economical and vegetarian friendly.

    I stood in my friends kitchen and watched (with dismay) as she cooked a dish of summer squash for us to eat. At the time, I didn't like squash. This recipe converted me. I love it now! I make this with a combination of yellow and green summer squash. For non-squash eaters, it is good with the pale green variety sold as "calbeza" since it is milder in flavor. We use pepper jack cheese, but it is also good with sharp cheddar. If I make it with extra cheese, my preschooler will eat it without complaint.

    This yields a mild curried beef dish that is satisfyingly chunky and roast-like. Don't be put off by the seemingly large amount of curry powder, the long cook time yields a surprisingly subtle curry flavor and the sweetness of the vegetables balances it nicely. This is not a soupy curry, it does not need to be served over rice. DH did not realize this was a crock pot dish!

    I started making this as an attempt to recreate the carrot salad served at Chik-fil-a. This is not quite the same, but it is a tasty non-fat side dish to serve with spicy foods.     The first time I went to make barbecue sauce from scratch, I discovered I didn't have any catsup. All I had was a partial bottle of mesquite barbecue sauce from the store. I used the barbecue sauce in place of the catsup in the recipe I was using, and thus my "cheeter" sauce filled with "meSKEETer" flavor was born. Its the only version my family wants now.

    Chocolate Cupcakes stuffed with spinach, blueberries, and whole grains. Is it too good to be true? This recipe is adapted from Missy Chase Lapin's The Sneaky Chef cookbook. I've made these twice now, and they are a big hit in my family! The first time, I made them as cupcakes and covered with a cream-cheese cauliflower icing (see separate recipe). The 2nd time, I made them in mini-bundt pans and dusted with powdered sugar. The kids thought they were giant cake donuts. These taste almost like a box-made chocolate cupcake... honest!

    This is a quick, easy soup to make for lunch. It is a great way to use up leftover eggplant. When adding the curry powder, the quantity given is approximate. There is a huge variation in the spiciness of curry powder. Use an amount that makes the soup taste good to you. If you do not have vegetable stock, any other stock will work.

    These are from Jessica Seinfeld's book. I have not tried these yet, but they are next on my list. They pack a nutritional punch with yellow (winter) squash, blueberries, and spinach. To make the squash and spinach purees, pre-cook the veggies. The key is to puree them (in the food processor) until absolutely smooth and creamy. If you use "sneaky chef", you need 1 cup of "purple puree." When I make this, I will try it with a blend of whole wheat flour and update as appropriate.

    This is from Jessica Seinfeld's cookbook. I made this and was amazed. You can't taste the cauliflower. Honest. Serve this slightly chilled (not warm!) for optimal deception. If the icing is warm, you will smell (not taste) the vegetable. The apparently large amount of vanilla helps to mask the smell of the cauliflower.
