This is one of our favorite crock pot soups. It's very quick to assemble and very tasty with some crusty bread on a cold and rainy day. It is economical and vegetarian friendly.

    Recipe #244222

I stood in my friends kitchen and watched (with dismay) as she cooked a dish of summer squash for us to eat. At the time, I didn't like squash. This recipe converted me. I love it now! I make this with a combination of yellow and green summer squash. For non-squash eaters, it is good with the pale green variety sold as "calbeza" since it is milder in flavor. We use pepper jack cheese, but it is also good with sharp cheddar. If I make it with extra cheese, my preschooler will eat it without complaint.

    Recipe #242529

A blue martini-glass drink that reminds you of the carribean-blue. The lemon or orange twist is supposed to swim in the drink like a little fish in the ocean.

    Recipe #248753

This is one of those "too easy to post" recipes. I'm posting for menu planning and nutritional calculation purposes. Nothing fancy, just a kid friendly snack or meal that I can make in 5 minutes. Use pre-sliced sandwich cheese for speed, but it works with thin slices of any cheese.

    Recipe #248559

From a fantastic award winningregional cookbook from the Junior League of North Harris County (Houston). It is called Texas Ties, and I have NEVER had a bad recipe from the book. I have not tried this one, but it sounds yummy.

    Recipe #245838

This yields a mild curried beef dish that is satisfyingly chunky and roast-like. Don't be put off by the seemingly large amount of curry powder, the long cook time yields a surprisingly subtle curry flavor and the sweetness of the vegetables balances it nicely. This is not a soupy curry, it does not need to be served over rice. DH did not realize this was a crock pot dish!

    Recipe #249732

I wanted to have a freezer-to-skillet meal that would cook in 10 minutes similar to the meals for two that Bertolli sells in the freezer case. Rather than preparing this all at once, I filled the bag as I had extra ingredients from preparing other meals.

    Recipe #249063

This is a great make-ahead breakfast for a crowd. I take it to potluck breakfast events and it just disappears! When I can find it, I use a soft chorizo that is not in casings. Otherwise, I use the hot Jimmy Dean variety.

    Recipe #246327

I started making this as an attempt to recreate the carrot salad served at Chik-fil-a. This is not quite the same, but it is a tasty non-fat side dish to serve with spicy foods. I served this with some Indian chicken a friend brought over and it made a nice meal. I've also paired it with bar-b-que and potatoe salad.

    Recipe #246854

I have 2 picky eaters under 4, and I am constantly looking for ways to get them to eat anything new. This calls for a velveeta slice (the wrapped kind for sandwiches), but I suspect any cheese your child likes will work. I serve this for lunch or dinner with fresh fruit. I've added up to 1 tbl of recipe#256341 without my kids noticing.

    Recipe #246323

The first time I went to make barbecue sauce from scratch, I discovered I didn't have any catsup. All I had was a partial bottle of mesquite barbecue sauce from the store. I used the barbecue sauce in place of the catsup in the recipe I was using, and thus my "cheeter" sauce filled with "meSKEETer" flavor was born. Its the only version my family wants now.

    Recipe #248119

Recipe adapted from "The Simpler The Better: Sensational Home Cooking in 3 Easy Steps." I received a copy of the recipe from my mom and have since modified it by adding capers and wine. Use jarred roasted peppers, the ones in oil or in salt water both work well. I use the "tube" style of tomato paste.

    Recipe #240298

While this is similar to other zaar recipes for Chile Rellenos, this is our favorite. When we can get Hatch Chiles, that is our chile of choice. Otherwise, we use Anaheims. We use recipe#246325 for the salsa.

    Recipe #246527

From a fantastic regional cookbook from the Junior League of North Harris County (Houston). It is called Texas Ties, and I have NEVER had a bad recipe from the book. This is good both hot or cold. As would be expected with tomatillos and lime juice, this soup is quite citrus-y. I like the leftover soup as a dip with raw jicama.

    Recipe #245834

Chocolate Cupcakes stuffed with spinach, blueberries, and whole grains. Is it too good to be true? This recipe is adapted from Missy Chase Lapin's The Sneaky Chef cookbook. I've made these twice now, and they are a big hit in my family! The first time, I made them as cupcakes and covered with a cream-cheese cauliflower icing (see separate recipe). The 2nd time, I made them in mini-bundt pans and dusted with powdered sugar. The kids thought they were giant cake donuts. These taste almost like a box-made chocolate cupcake... honest!

    Recipe #260924

Inspired by Dave Lieberman's recipe, but modified for my family. This is a great summer salad for large group functions. You can make ahead and serve when ready. It is really good served with hummus and flatbread as a vegetarian meal.

    Recipe #243684

This is a quick, easy soup to make for lunch. It is a great way to use up leftover eggplant. When adding the curry powder, the quantity given is approximate. There is a huge variation in the spiciness of curry powder. Use an amount that makes the soup taste good to you. If you do not have vegetable stock, any other stock will work.

    Recipe #252648

This is from Jessica Seinfeld's book. She serves it with a carrot cream cheese icing (posted separately)

    Recipe #259605

These are from Jessica Seinfeld's book. I have not tried these yet, but they are next on my list. They pack a nutritional punch with yellow (winter) squash, blueberries, and spinach. To make the squash and spinach purees, pre-cook the veggies. The key is to puree them (in the food processor) until absolutely smooth and creamy. If you use "sneaky chef", you need 1 cup of "purple puree." When I make this, I will try it with a blend of whole wheat flour and update as appropriate.

    Recipe #259478

This is from Jessica Seinfeld's cookbook. I made this and was amazed. You can't taste the cauliflower. Honest. Serve this slightly chilled (not warm!) for optimal deception. If the icing is warm, you will smell (not taste) the vegetable. The apparently large amount of vanilla helps to mask the smell of the cauliflower.
