Whole wheat pasta with lots of veggies and a low fat sauce... doesn't get any better than this.

    Recipe #301720

Great mid-day snack for a boost of energy to last you to dinner (not to mention pretty good for you, too). I made this with two eggs, but I think it could use another. Let me know what you think. I may just add an egg white next time.

    Recipe #301559

I was in the mood for some Middle Eastern food, specifically falafel and hummus. Not having time to go to the store, I used up what veggies I had on hand to fill my veg quota for the day. It is a recipe I will continue to play with, but it definitely sated my craving.

    Recipe #298398

Extraordinary!! I got this from Food Network in order to use up some frozen artichokes. If you want to be authentic to Giada, then use 1/3 cup mascarpone cheese instead of neufchatel. I used the less-fat cream cheese to lower the fat a bit and because it's cheaper. There is also an issue of leftover strings from the artichokes. It did not bother me, but you may want to strain before serving.

Saw this episode and knew I had to make this cake... ok, maybe I'll cheat here and there. Alton made his own coconut milk, coconut cream, and coconut extract from SCRATCH. Plus, he saved the coconut juice from the actual coconut to spray on top of the baked cakes. I haven't made this yet. I'm posting to see nutrition info. This will be my birthday cake in a couple days and I'm seeing what tweaking (less fat) I can get away with. Prep time is a guess.

    Recipe #242952

These are nutritious little muffins that I concocted after studying many recipes. They don't get very big, but they're just the right size for a little tasty snack. I love to split them in half and put a teaspoon of natural peanut butter on them. My recipe makes 18 muffins at 80 cals, .5 fat each.

    Recipe #240964

Am I vegetarian? Nope. But I love veggies, especially when they're fresh. Here's to healthy hearts and full stomachs!
