I got this from allrecipes.com and it turned out pretty great. Once I had the pie all set to go into the oven, I sprinkled about 1 cup more of coconut on top and then baked it all. This does make the pie VERY sweet so you may cut the sugar a bit. Very yummy!
I found this in a magazine while we were stationed overseas. My kids and hubby love it and it's so easy to make. I do not use the tomato or chopped onion, so it's just rice with seasoning but it works for us.
I got this from my Memaw, my cooking idol. Keeps well refrigerated and I have frozen it and used it with great results. I have used this over and over again, especially at holidays, and it always turns out right.
