The Chanukah tradition of frying in oil is considered the culinary equivalent of lighting a menorah. A deep-fat thermometer is an essential tool for deep-frying; check that your oil returns to 375°F between batches; this prevents the food from absorbing it. This recipe is Sarah Molten's and she served it with- what else?--brisket.
I adapted this recipe from a TV food show "Cooking Live". The original calls for a whole duck and szechuan peppercorns. If you want to use a whole duck, increase the cooking time by 15 minutes for the simmering and 15 minutes for the roasting.
