    A dear friend gave me this recipe after she found it in her Taste of Home magazine. (You can see the original submission at: http://www.tasteofhome.com/recipes/Potluck-Rice-Pilaf) It was originally to be made for a crowd, but we quartered the recipe for our family. Quick, easy, and tasty! Hope you and your family enjoy as much as we do! (Toasting almonds is not included in prep time.)

    This is a delicious, comforting soup that comes together quickly -- under 30 minutes! I especially love to make it when someone in the family is feeling under the weather. Serve with a nice crusty bread and this makes a filling lunch or a light dinner. I discovered it in one of those "cooking for 2" recipe booklets shortly after DH and I married and have made it many times since then.

    I requested this meal often while growing up, and since it was pretty easy to put together (and chock-full of veggies), my mom never minded making it for us! After I married and moved out of the house, my mom presented me with a family cookbook -- this recipe for "can't-stop-eating stir fry" was one of the first entries. ***NOTE: For the beef, I usually use skirt steak, but chuck, sirloin, etc work well, too. I often double the veggies and halve the meat; still filling and delicious every time!***

It's been months since I bought a can of cream of mushroom, cream of chicken, cream of celery, cheddar cheese, or tomato soup... helping my budget and my health at the same time. :)

    This recipe is just as convenient as store-bought, and tastes great, too! My favorite part is the easy clean up -- 1 pot, 1 measuring cup, and 2 spoons. It is very versatile, as the chips can be changed out with semi-sweet, milk chocolate, peanut butter, etc. A variety of nuts could be added, as well. This is especially good with Recipe #235380! I cool and cut these, then wrap each in plastic wrap; makes a great lunch box treat or on-the-go snack!

    Great for those busy mornings or too-hot-to-cook days. Sometimes I use half the package of sausage to stretch the budget and it's still great. I've also doubled the seasonings for an extra kick. *NOTE* The recipe should say "pepper jack cheese" in the toppings.
