This quesadilla has marinated grilled chicken, sauteed mushrooms and onions, frozen spinach, sun dried tomatoes, and brie cheese. The brie makes it very buttery and delicious. The measurements for the marinade are estimates so feel free to use your judgment. Prep time includes marinating.
This pizza is a good balance of sweet from the onions, cheese, and garlic, and the spice of the crushed red pepper flakes. Note: You can make the roasted garlic and onions ahead of time and store in the refrigerator if you are pressed for time.
I found spinach, garlic, and feta chicken sausage at the store and thought it would be great on a pizza. I also had canned san marzano tomatoes so I decided to make my own marinara. You can substitute pre-made marinara to make it even easy. I also used whole wheat crust to make it healthier.
I came up with this recipe and tested it out tonight. It came out much better than I expected. It's grilled balsamic chicken topped with a garlic tomato basil sauce and covered in cheese! Measurements are estimates.
This is a little different from most coleslaws because it is vinegar based and has feta cheese in it. I love the slaw at Zoe's so I tried to re-create it and think I came pretty close. Not sure of the exact measurements so I just estimated them on here. Great for as a side for a BBQ.

I found this recipe in the Everyday with Rachel Ray magazine. I have yet to try it but it sounds good. If you want to lighten it up, you may be able to substitute wheat bread for white, skim milk for whole, and dark chocolate for milk chocolate.
This is Giada's recipe and they are the lightest cupcakes ever. The glaze is really good because it is not too heavy like most frostings. Very easy to make and addicting to eat! She made them using mini muffin tins but I used the regular sized ones and they came out great
This is a version of Giada's Avocado and Arugala pesto that I used when I didn't have all of the ingredients on hand. It tastes really rich and creamy so it's hard to believe that it's good for you! I added chicken to it but it would be great with shrimp too.
I came up with this dish when I had an abudance of home grown creole tomatoes that I didn't want to go bad before I left to go out of town. I will definitely be making it again! Many of the measurements are estimates and feel free use whatever cheeses are available to you (I used what was in my fridge). You can also roast the tomatoes a day ahead to save time.
This is a twist on regular oatmeal for breakfast. It's quick because you "bake" the apples in the microwave and use instanat oatmeal.
