    This is a twist on regular oatmeal for breakfast. It's quick because you "bake" the apples in the microwave and use instanat oatmeal. Note: most of y measurements are guestimates because this was the first time I made this recipe so feel free to add or subtract ingredients. This makes 2 servings but you can easy double it.

    I found this recipe in the Everyday with Rachel Ray magazine. I have yet to try it but it sounds good. If you want to lighten it up, you may be able to substitute wheat bread for white, skim milk for whole, and dark chocolate for milk chocolate.

    This is a Tyler Florence recipe that is very hearty and filling. Great for a cold night or a big crowd. The recipe says to let simmer 40 minutes, but I put it on at lunch time and cooked it all day and the chicken was super tender and falling off the bone!

    I came up with this dish when I had an abudance of home grown creole tomatoes that I didn't want to go bad before I left to go out of town. I will definitely be making it again!
