This is a version of Giada's Avocado and Arugala pesto that I used when I didn't have all of the ingredients on hand. It tastes really rich and creamy so it's hard to believe that it's good for you! I added chicken to it but it would be great with shrimp too.
I came up with this dish when I had an abudance of home grown creole tomatoes that I didn't want to go bad before I left to go out of town. I will definitely be making it again! Many of the measurements are estimates and feel free use whatever cheeses are available to you (I used what was in my fridge). You can also roast the tomatoes a day ahead to save time.
This is a twist on regular oatmeal for breakfast. It's quick because you "bake" the apples in the microwave and use instanat oatmeal.

I found spinach, garlic, and feta chicken sausage at the store and thought it would be great on a pizza. I also had canned san marzano tomatoes so I decided to make my own marinara. You can substitute pre-made marinara to make it even easy. I also used whole wheat crust to make it healthier.

This is a little different from most coleslaws because it is vinegar based and has feta cheese in it. I love the slaw at Zoe's so I tried to re-create it and think I came pretty close. Not sure of the exact measurements so I just estimated them on here. Great for as a side for a BBQ.

Very easy and elegant entree. I saw Rachael Ray make this but I couldn't find the recipe so I did it from memory and it came out great. I didn't have enough sausage so I added a few chicken tenders to it. The measurements may not be exact because I just eyeballed everything.
This is a Tyler Florence recipe that is very hearty and filling. Great for a cold night or a big crowd. The recipe says to let simmer 40 minutes, but I put it on at lunch time and cooked it all day and the chicken was super tender and falling off the bone!
