I made this for a poker night I recently hosted. I tried a pan without tomato and found I prefered the sweetness they brought to the plate. If you are a cheese lover feel free to melt some provolone over the top.
This dish is traditionally made with veal and pork but I keep the cost low by only using the cheapest pork I can find, usually boneless country ribs. No chicken here. I like to serve it over barley which soaks up the remaining liquid nicely!
This cake is my all time favorite chocolate cake. I couldnt find a recipe with the perfect combination of cake and frosting. So this cake is an adpatation of an Ina Garten cake and Alton Brown ganache. The cake tastes better cold but I can never wait for it to chill so dive right in immediately!
This salsa is as versatile as it is tasty. I use it in everything from fish tacos to as an additive to pasta for a quick pasta salad! All the fresh ingredients only cost me a little more than two dollars!
