    These are really good. You can freeze the dough ahead of time for up to 2 weeks. Just roll into a log and wrap well in wax paper. Slice off what you need.

    I have been trying to get more beans into my families diet because they are so good for you. We even like beans, but sometimes you feel like something different. I found a recipe online that was called Pork-n-Beans Cake. I thought it would be fun to try something like that, and this is what I came up with. My entire family loves these. You can't taste the beans. Really . They would easily make a nice cupcake with cream cheese frosting. Try them and ask people what the weird ingredient is, (they never know:) This makes a big batch. Feel free to add cranberries, raisins, or pecans...they taste great in these.

    My mom used to make this instead of pumpkin pie in the fall. It has great pumpkin flavor, and is so quick and easy. You can use squash instead of pumpkin, just cook it and remove all seeds and strings, and grind it until very smooth in your food processor. Just use 15 oz. of squash instead of pumpkin then. Eveybody who has tried this loves it, even very picky children who won't eat veggies. My husband and I have been known to eat a double batch by ourselves for supper. High in carotene, vit.C and vit.     This is a really easy recipe to use up some of that rhubarb. It also tastes wonderful. You can still taste the rhubarb, but it's not overpowering. This makes a nice gift with some really good wheat bread.
