    This marinade recipe was presented as a sampler at my local Peoria, IL Hy-Vee Grocery Store during a meat sale. My kids loved it, which makes it a winner with me. I liked it too!

    I always loved Morning Glory muffin recipes, but when I found I needed to be gluten-free I kissed those good-bye. I decided I'd like to try to create my own as a way for me to continue to enjoy it and to sneak some fiber/veggies into my kids. Here's what I came up with. Note: Food.com doesn't recognize King Arthur Gluten-Free Muffin Mix, but I specifically use it.

    I found an oatmeal pancake recipe that sounded really good but it wasn't gluten free. I changed and adapted it to suit my tastes, made it gluten free, and, Voila! This is my favorite pancake recipe. It is hearty, heart-healthy, high protein, low glycemic and packs fiber for a satisfying breakfast that will carry you a long way. Note: the oats, milk and yogurt need to soak together for 8 hours before mixing in remaining ingredients. Freeze individual pancakes and you can reheat them in the oven (or microwave). Using a moderate oven, I wrap 2 pancakes in foil and heat for about 15 minutes, no thawing necessary. These make a great sandwich with your favorite nut butter. They are also great with your favorite jam, compote, syrup or combination topped with whipped cream!

    I was looking for a good recipe for a homemade bar-b-que sauce I could use on pork chops, but I couldn't find one I liked so I made my own. So far I've only used it on pork chops I cooked in the oven. It's super easy and fast. And it's tasty too! Even my 3 year-old and my husband like it.
