    I love spinach salads, dijon mustard and dried cherries so this was a hit with me from the get go. It's a Martha Stewart recipe and absolutely rocks! You could easily substitute dried cranberries, but the tartness of the cherries are amazing. Enjoy! Note: prep time includes time for toasting pumpkin seeds.

    This recipe is from a Kraft magazine I recently picked up in the grocery store. It's simple, very chewy and delicious! We used dried cherries in place of the apricots because that's what we had on hand and also increased the coconut to 1/2 cup just because we love coconut. Have fun with your own version!

There's just the fat in the eggs, and you could probably substitute Egg-Beaters (although I've never tried it).     This quick and easy recipe comes from the Renees Dressing that is used in the salad....I've modified it slightly. It is absolutely delicious....sweet and tangy and refreshing...and the colour of it is beautiful. You should prepare it just before serving, which may be it's only setback, but it doesn't take long.     These are very dense, very chocolately and very good!! Got this recipe at a WW meeting and believe it or not, each "muffin" has only 1 point!
