This is from the Soy Soy Soy cookbook by Jeanette Parsons Egan

    Recipe #386898

A quick and easy version of Eritrean/Ethiopian lentils. Could also be called curry lentils. The great thing is that you can leave this at a simmer and walk away, just stirring occasionally and adding more water until you reach the desired consistency.

    Recipe #339964

This recipe is delicious and unbelievably quick. A great recipe for whipping up with the kids for instant results. I use whole wheat flour and half coconut oil/half canola oil. Microwave manditory. Source unknown.

    Recipe #339696

Easy and delicious broccoli cheddar soup. Blend partially for lots of chunks or blend totally for an even consistency. Add a package of dried cheese that comes in the mac and cheese boxes for a yellow/orange color and a kicked up a notch flavor. Fresh broccoli is of course possible, make sure to cut into florets first.

    Recipe #250400

My friends say this is the best fish they've ever had! Serve with quinoa tossed with some ginger and garlic. I created this recipe as an accompinent to various Asian dishes I was preparing. Can be eaten along side a noodle salad with chopsticks as well.

    Recipe #248769

A melt in your mouth "pocket cooked" fish with rosemary good enough to chew off the stem. I am always asked for this recipe, which I developed to serve my recent Rosemary craving.

    Recipe #248766

A fresh/zippy salad that can be made well in advance and served with a dollop of sour cream and chives/parsley/cilantro as a garnish or alongside fish, rice or something else fun. Mango may be used in addition to or in place of the banana. I developed this recipe to combine the delicious flavors of Island and Latin food with Californian cuisene.

    Recipe #248758

This is a fun fudge to do with the kids, because of it's ease and rich/creamy flavor. Prep time does not include refrigeration.

    Recipe #231114

From the book The Vegetarian Epicure by Anna Thomas

    Recipe #479263

A tasty soup that my kids beg for!

    Recipe #479262

A warm and yummy bread...or is it a cake...perfect for guests.

    Recipe #468611

Comments from Mommy: "I use butter...don't overbake! The trick to these cookies is figuring out your oven and how long to keep them in...when they come out they should look not quite done, let them sit and they will firm up." I use half whole wheat flour and demarra granulated sugar. Could probably use brown sugar in the recipe for extra molasses. I also use blackstrap molasses. The flavor mellows the second day (and hey should get better with age...if they last that long!) Just remember to roll in granulated sugar so you have that crispy, sugary outside of your cookie.

    Recipe #445538

A warm, thick and rich...yet light and delicate tomato barely soup recipe given to me by my friend Nili. Garnish with Lemon Thyme or Basil (or both) or just go ahead and add to the pot while cooking. Also excellent garnished with mozerella or parmesean cheese.

    Recipe #442243

From the children's book "The Seasons of Arnold's Apple Tree" by Gail Gibbons ISBN 0-15-271246-1. Delicious!

    Recipe #439215

A delicious ice cream that is parve (made without milk or meat products) that I found in Mothering Magazine #156 that I modified.

    Recipe #428900

Found in my Mothering Magazine for June. Delicious and healthy. Keeps well overnight in the fridge, too. No one could guess the "secret ingredient" (avacado). :)

    Recipe #426483

A delicious vegan challah adapted from an Israeli cookbook by Keren Peled. When I don't need to make this vegan, I just use an egg instead of the egg replacer and also brush with an egg for the glaze with, perhaps a pinch of brown sugar and soy milk or even regular milk for a dairy meal (we have a Dairy ONLY kitchen). You may also sprinkle with poppyseeds, add vanilla and/or cinnamon (I'm trying this for the first time today) or replace the vital wheat gluten with ground flax seeds (which I prefer!) This is our standby challah recipe for shabbat and chaggim and it's truly delicious (and I'm HARD to please)!

    Recipe #394212

A delicious but very unconventional "stir-fry", suitable for vegans, delicious over rice (in a main dish) ...in a pita...or plain (as a side dish). Only use a high quality (and REAL) soy sauce. It REALLY makes a difference.

    Recipe #376393

Original recipe by Esther Gilbertson, I believe. A quick and easy way to make a pie crust, or as it was originally called "oil pastry" with no fuss but excellent results. When recipe calls for salad oil, I took this to mean anything you'd use on a salad and put in half canola half organic olive oil.

    Recipe #355695

I got this recipe from my sister, Kelly. Light and eggy, delicious and moist. Perfect every time. Easy to toss in an extra banana, a handful of chocolate chips or some flax seeds. Works just fine with Whole Wheat Flour and brown sugar. I have even replaced salt with sodium ascorbate crystals. THE BEST banana muffins you have ever tasted!
