My husband and I love blue cheese on our steaks. This is a little bit more sophisticated version. A good dish to serve company for dinner. I like to serve it with a loaded baked potato and a simple, green salad. From Giada De Laurentis, TFN. Just a little warning, this sauce is very rich and a little goes a long way.
This is one of my favorite summer time pasta dishes. It's light and healthy and has all of my favorite veggies. It is also very adaptable to your personal favorites, or what you have on hand. Can be served as a side dish or add sliced grilled chicken breast to make more of a meal ( would probably serve 4 that way). Roasted red peppers and sun-dried tomatoes are a nice alternate veggies to add.
This is Rachel Ray's. It is so awesome, I can't think of a single modification....it is perfect. It is more time consuming than most tortilla soups because of the roasted veggies, but it is totally worth it. If you wanted to go vegetarian, leave out the chicken, there is so much to this soup it would be great that way.
This is a spin off of a recipe from Cooking Light. It's a great comfort food fix and you don't totally blow your diet. Instead of making the cornbread, store bought cornbread mixes work great and they are fast.
I had this at a local restaurant and it is seriously the best salmon I have ever had. I asked them for the recipe and but they wouldn't give it out. This is my recreation and I think it's better than theirs!
