    Here's a tasty way to use up what's leftover after you strain the rice pieces from your horchata. For the horchata, I use a recipe like #67964, but I use brown rice and I add a handful of almonds. The pudding requires a little boost in sugar, vanilla, and cinnamon since most of those flavors end up in the horchata.

    Savory pancake, great any time of the day. I adore Sharon123's cottage cheese pancakes (#348917), so I modified it to something I can feel good about eating almost every day. I love to sprinkle a little bit of sea salt on these after they're done, and eat them with additional fat-free cottage cheese. My husband likes them with sugar-free pancake syrup. Sometimes I use butter instead of the cooking spray, but obviously that changes the calories a bit. ;)

    I tried something like this at a Caltech dinner last year, and I loved it so much that I had to reverse-engineer it. I then improved upon it so it's exactly how I like it. It's a lot of time and effort, but I think it's worth it. (Note that all ingredients can be modified to taste. Sugar substitutes work well, but you might need additional gelatin.)
