This rum cake is inspired by island ingredients and adds coconut, peaches, lime, ginger and honey to a traditional rum cake. Crystalized ginger is sweetened ginger and is great in baked goods. It can be purchased in many specialty stores and in spice aisles of most supermarkets. You may use a dark rum, if preferred. *Caution, if you are using a cake mix that already has pudding in it, omit the box of pudding in the recipe.

I tore this recipe out of People magazine in the May 14, 2012 edition. Katie Couric says this recipe is a tradition and the perfect treat for Mother's Day. They are a little cakey on the bottom and then gooey like a delicious lemon pie and tart like lemon drop candies. I used cake flour and got great results. You can use all purpose flour as well. Delicious!

Just a simple answer to breakfast or a light supper. I love the freshness of this frittata and the lightness. You can add whatever veggies you want, but I like the orange peppers, artichoke hearts, grape tomatoes, and green onions with the feta. The tomatoes literally burst in your mouth creating a yummy ooziness.
