    This is adapted from a recipe shown on a Good Eats episode (Alton Brown). I was never happy with brown rice, because it was always too hard and never quite absorbed enough flavor. The first time I made this, I was hooked. I am giving my adaptation, however the original is simply rice, water, butter and salt. It's the method that makes this one incredible. Sometimes I exchange part of the water for fresh lemon juice and toss in some slivered almonds and drop the veggies (excellent with curried shrimp). Other times I use chicken broth, add sesame oil, soy sauce, and fresh peas and use it as a mock fried rice. Making it with chicken broth walnuts and dried cranberries is nice with turkey as a holiday side dish. It's great to bump up the "healthy" factor. Be creative and enjoy!

    I created this recipe when I was trying to make potato salad and the potatoes were too hard. It was a huge hit with my family. I have adapted it over time, but it is still a favorite. Sharp cheddar cheese is awesome, as is Swiss cheese, but if you like milder cheeses, I am sure it would be great too. I used Jalapeno muenster once, and it was also delicious.

    Super fast hearty dinner! It is actually pretty enough for company too. Throw some frozen dinner rolls in the oven as soon as the burger is done, and you have a complete, delicious meal in about 20 minutes. And the leftovers are even better! If you can't get quick cooking barley, you can use tiny pasta like acini di pepe, orzo, Israeli couscous or even rice. Or parcook regular barley.

    I know that purists will be horrified, but these are quick, easy and delicious for a work night dinner. Serve with applesauce and/or sour cream. These do not require much oil, and can easily be fried on a hot griddle, to make them faster. Just brush the griddle with oil before placing the batter. Instead of chopping the green onion, just snip it into rings with kitchen shears. (My sister says that the milk can be replaced with chicken stock, but I have not tried it).

    Delicious, creamy and simple. You can add rum-soaked raisins when you add the milk if you wish. I serve it with crushed-berry syrup or applesauce. This is the way all of my husband's family (in Germany) makes it. They generally serve it as a main dish rather than a desert, but cut down the sugar a bit.

    Easy and delicious. This is extremely flavorful, so you can dial down the spices a bit, but it is amazing! I use an electric PC, but I also have a stove top, and I think the times would be the same for either. Cut the pieces into serving pieces beforehand, so each is browned and simple to serve. Use a drinkable red wine. I buy box wines to keep on hand for cooking, and they are perfect for this. I serve this with garlic roasted mashed potatoes and honey-glazed carrots.

    This is delicious, and unlike many salads, has no sweetness at all. You can replace the bacon with finely cubed ham, or bologna to make it taste like authentic German potato salad.

    This looks like it should be horribly difficult, but it's really simple. If you are a beginner cook and REALLY want to impress people, this is the recipe for you. I use fresh garlic and garlic powder - feel free to cut back on either. We actually prefer this made with surimi (fake crab meat) rather than fresh crab, but either is fine. Make sure the crab is picked over for shells. Feel free to toss in some scallops too - just saute them for a few minutes in some butter first. Substitute 1 box of chopped broccoli, defrosted, for the spinach, if desired, or omit entirely.

    I made this up for my daughter, who does not like meat. It is really delicious. It has a more "Italian" feel to it, so salsa is not really good with it, but sour cream or ranch dressing make nice dipping sauces. The ingredients are for ONE quesadilla. I think this would make a really nice appetizer or snack, as well. I make these two at a time on my electric griddle, and pretty much put the filling in a ring around the tortilla - not too close to the center or edge. Once the cheese melts and spreads out a bit, the filling is then perfectly even.

    Incredibly simple, and really good. Start to finish about 10 minutes, and my family says it tastes like good restaurant fare. The key is to use ONLY high quality ingredients. Tuna packed in olive oil is also sometimes called "tonno".
