    Tonight I threw together a soup for dinner. This is simple, quick and hearty. BF is not keen on anything healthy, and he has a long list of things he doesn't eat. I sneak vegetables into everything I cook to try and keep him nutritionally balanced, and adding things like kielbasa to keep him interested. We were really impressed with how good it was, so I am posting it here so I can remember and make it again. I am sure you could add almost any other sturdy vegetable to this and it would work fine.

    My b/f loooooooves Bakers Square French Silk pie. However, the chain has closed all of its stores in Southern California. A few Valentines days ago I tried the recipe that calls for Knox Gelatin and buttermilk - that was a disaster. This recipe which I found on bigoven.com is the closest to perfection as I have been able to find. Making sure everything is well mixed is the secret to a nice high fuffy pie.

    Every year it is my BF's and my job to bring the green bean casserole to the Thanksgiving dinner. The recipe started with us just adding bacon (because EVERYTHING is better with bacon) and then we added more "stuff" till we came up with this super fattening, garlic laden delight. Maybe next time we might have to add shredded cheese and some sauteed onions. . . food for thought :)

    I wanted to make something quick and easy for dinner and threw a whole lot of middle eastern/indian ingredients together and came up with a meatball and veggie "thing." The B/F thinks I am kind of a freak because I am able to eyeball ingredients, throw things together, and more often than not it will be edible. However in this case he said "this is one of the best things you have ever pulled out of your, ummm head" (sanitized for Zaar). He then forced me to remember, and write it down so I could make it again. So here it is. I have no idea what to call it.

    My SIL wanted a carrot cake for her birthday. I am not keen on layered cakes. They are too much of a pain to make. Bundt cakes have the less hassle and pretty presentation factor. My first attempt was in a more complex designed bundt pan and it was a flop! Use a simple design bundt pan, make sure to grease it up really well, and flour it.

    I wanted a rich flavorful Chili Colorado. I took the best of all the recipes I have and came up with this. The BF is not fond of chunks of tomato or onion. I chopped the garlic and onions finely - you are welcome to leave them chunky and use chopped tomatoes if you do not have picky eaters :) This would also do well in the crock pot. Prepare the meat till step 3 and then place the meat and the tomato puree in the crock and heat on low for 6-8 hours.

    Here is the story :) As an Aussie living "Up Over" (in the US) I asked help my 11 year old niece make Pavlova for her report on Australian Christmas Traditions & food. The report was handed in & then I got the urgent call from my Brother. As part of her report she was to make a "Pav" & serve it to her class. She had handed in her report with a traditional Pavlova recipe. It serves 6-8 people. Her class is comprised of 32 kids required to taste some Aussie "Chrissy" traditional tucker (food). If you have ever made a Pav, you know it takes a LOT of work. For an inexperienced 11 year old making the meringue base/crust, it's tough stuff & I was not up to the challenge helping her make five of them. Then possums (as Dame Edna would say), a stroke of brilliance struck me & we decided to try and fake it! To my surprise it worked! YEAH MATE! Tastes really close to the real deal. I've uploaded some pics to show the Mini Faux Pav we made to test the recipe out, & then the final result as made by my niece.

    My version of Ceviche. I am pretty much a wuss when it comes to hot spicy foods. So I made my own milder but still flavorful Ceviche. I also am allergic to crab, so this is made with Krab (imitation fish based crab or surimi). Cook time is really more for time the ceviche will need to chill.

    My parents are from Brooklyn NY (coming from an Aussie this might sound strange) but my parents migrated to Melbourne in the early 1960's. From the age of 7 onwards every summer vacation we would visit the family in Brooklyn NY. The things I looked forward to most on our visits was of course the original Nathan's and on Brighton Beach Avenue there was Mrs. Stahl for Potatonik. Halfway between a kugel and a lava hot greasy potato brick which was so wonderful on cold winter days. I assure you, this concoction is heaven! The original recipe was posted in the NY Times food section.
