An easy and delicious chicken recipe. The chile jam adds spice and sweetness to the chicken. This recipe comes from Daphne Oz. She serves it with caramelized sweet potatoes and peaches. I will post that recipe, too. It's a great combination, but I love the chicken recipe alone, too! This recipe serves two (2 thighs per person),but you can easily increase the amounts.
This is the recipe that got me to like quinoa! It's really simple and tasty. Toasting the quinoa before cooking, gives it a really rich and nutty flavor. Don't skip that part! This recipe was developed by Sarah Matheny for her cookbook, "Peas and Thank You".
This is one of the best pancake recipes I have tried. It's by Daphne Oz. Not only are the pancakes delicious, they are pretty healthy, too! Note: If you don't have buttermilk, you can make your own: add 1 T white distilled vinegar to 1 C milk and let sit for 5 minutes (you would need to do 1 1/2 that for this recipe to yield 1 1/2 C buttermilk). I like to use 100% real maple syrup over these pancakes.
This is a Daphne Oz recipe. She likes to serve it alongside her Chile Jam Chicken, which I have posted as a separate recipe. Delicious side dish! Note: this serves two, but you can easily increase the amounts.
An easy version. Feel free to add some extra veggies, or sub another protein for the shrimp. This recipes lends itself to easily adjusting ingredients to your liking. Enjoy! Note: This will serve 2 as a main course or 4 as a side dish.
I found this recipe at recipegoldmine and then adapted it slightly. We love pad thai. Especially with chicken AND shrimp! I did change the sauce recipe they had posted with one of my favorite combinations. I hope you enjoy!
This is a favorite cake in Sweden. It's a simple, buttery cake filled with cinnamon-sugar apple slices. It reminds me of a pound cake, but with a yummy apple cinnamon topping. The presentation is made really pretty by arranging the apple slices. You can serve this as a coffee cake or as a dessert. You can re-heat slices in the microwave if you like it warmed. Recipe from Epicurious.
A fun twist on your average shish kebab. The recipe calls for the use of either lamb or beef. I think it may also be good on chicken. Serve with rice. Enjoy! Note: the timing does not include marinating.
This is an easy marinade to throw together. You can marinate any fish you'd like with this marinade, but I prefer whitefish. You only need to marinate your fish for a short amount of time - an hour or two is plenty.
From Eating Well magazine. Crispy fish doesn't have to be deep-fried to be tasty. This is a healthier version with a yummy pineapple slaw. Note: don't used crushed pineapple, it is too small for the slaw. Also, take some help from the grocery store and buy a carrot and cabbage slaw mix. Easy peasy! Our family loved this and will be making it often.
This is a great grilling recipe for when you're short on time but still want a flavorful meal. It's an easy one! Notes: You can grill the chicken on your stovetop, too. I sliced the chicken and served it over a green salad.
