    Is there anything better than homemade enchiladas? My family doesn't think so! We like them mild but you can use mild, medium or hot sauce, depending on your taste. This recipe yields 12 large enchiladas; 6 in each dish. An uncooked dish can easily be frozen for enjoyment at a later date. Just bring the chilled dish to room temperature before cooking.

    Yikes, another lasagna recipe you say? I love all the variations of this Italian classic, but this one is the best I've ever had. I think it's originally from the Taste of Home cookbook series, but I've tweaked it to my family's taste...and hopefully yours too. Note: Allow about 2 hours and 40 minutes from kitchen to table because the sauce needs to simmer for 1 hour and then the lasagna, once assembled, needs to cook for 50-70 minutes and rest for 15 minutes before serving.

    What I love about this jello-based salad is that it's not too sweet. Like the name implies, it is a "heavenly" accompaniment to everything else on your plate. If you like pina coladas, you'll love this salad. I think it got the name because it looks like a bowlful of divinity candy once it has set up (note that it needs to be refrigerated 12-24 hours before serving).
