I was always wanting the Garlic mashed potatoes I ate in restaurants to have more garlic. My mom has always used evaporated milk and everyone really loves her mashed potatoes. I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. To make it absolutely correct preface each of the steps with Make Husband...

    Recipe #51084

As a diabetic, I find that Barley really keeps my blood sugar level. I came up with this recipe to use as a side dish to replace rice. This side dish works really well with beef. Try it with a grilled steak that has been marinated in olive oil, garlic and rosemary or the Ann Lander's Meatloaf recipe that's posted in Recipezaar.

Bump up the nutrition in one of your favorite comfort foods. Serve them sliced with crispy bacon or fried ham for a great buffet dish.

    Recipe #51148

This has a spicy kick from the Thai peanut sauce. It goes really well with grilled meats.

    Recipe #42525

I have been working on making healthier meals to keep my blood sugar in check. I have been buying canned beans to try and coming up with creative soups for my lunches.

    Recipe #40635

This makes a great cook-ahead dish. Prepare it the day before for a great appetizer or cold lunch dish. This is a great dish, with lots of flavor, to take to work for food days. Also good for low-carb eaters.

    Recipe #45588

Here is a great recipe I created for stuffed zucchini. Aren't I humble. I heard people moaning when they ate this... or maybe that was me moaning. Oh well, everyone took 2 - 3 helpings of this and polished off what I thought was going to be my lunch for the week.

    Recipe #43764

Makes a huge pot. Not designed to be spicy hot. Most poblanos are mild to medium hot and provide a great flavor to the dish. I was making this for a lady who just had surgery so I did not want the soup to be too spicy. If you love the heat, add some finely diced jalapeno to bump it up. Great way to add lot's of colorful vegetables to your families diet. Start each meal with a bowl of soup and you have an easy way to add nutrition.

    Recipe #298009

We have a family day every other month where everyone brings a dish. When I realized that no one was bringing a vegetable I dug through my pantry and refrigerator and came up with this recipe. It went over really well with everyone... and I come from a very vocal Italian family that feels free to tell you what they liked and didn't like about a dish. The bacon in this dish will not be browned or crunchy but it really gives great flavor to the green beans. Just make sure you dice it and don't use large pieces. I also eliminated a large part of the canning liquid so the 'pot liquor' would have a full-bodied flavor and the beans would not be floating in too much liquid.

    Recipe #53991

This is an easy appetizer that tastes great. It would be a good appetizer for anyone on a low-carb diet.

    Recipe #43766

This is a mild mannered chili for my Californian husband. I used to try and sneak a jalapeno into foods but he would always notice the heat. If you like it hotter add red pepper to taste or any of your other favorite hot seasonings to convert this into the Superman version. Also, I like to come up with recipes that use complete cans of food. With only the two of us, partial cans and boxes of foods usually end up being thrown away. I also like to make a lot and freeze some for later. This chili is really good served over rice with finely minced onions and shredded cheddar cheese as toppers. Make sure you make this chili a day ahead so the flavors can meld together for a truly tasty experience.

    Recipe #51440

This is my version of the pickled vegetables they serve at Vietnamese restaurants. I have eliminated the sugar by using Splenda. This is a very refreshing and bright tasting side dish. It goes very well with rice based dishes or grilled meats. FYI - You can buy already prepared matchstick carrots in the grocery store.

    Recipe #45587

This is a great dish to make for a Tapas party. The meatballs need to be made a day ahead for the flavor to develop fully. This is a good dish for anyone doing sugar-busters or reducing carbohydrates.

    Recipe #45592

Bump up your healthy veggies with this easy to make soup. Will feed a crowd easily. The soup is very brothy for a low calorie starter or you can serve with cheese, chips, and guacamole for a filling meal. The soup can be prepared a day ahead to let the flavors develop.
