    This is a mild mannered chili for my Californian husband. I used to try and sneak a jalapeno into foods but he would always notice the heat. If you like it hotter add red pepper to taste or any of your other favorite hot seasonings to convert this into the Superman version. Also, I like to come up with recipes that use complete cans of food. With only the two of us, partial cans and boxes of foods usually end up being thrown away. I also like to make a lot and freeze some for later. This chili is really good served over rice with finely minced onions and shredded cheddar cheese as toppers. Make sure you make this chili a day ahead so the flavors can meld together for a truly tasty experience.

    I was always wanting the Garlic mashed potatoes I ate in restaurants to have more garlic. My mom has always used evaporated milk and everyone really loves her mashed potatoes. I decided to use her technique and seriously increase the garlic content to come up with the flavor that I thought a Garlic Mashed Potato dish should have. Simmering the garlic with the potatoes smooths out the harsh garlic taste while perfuming the potatoes with an abundance of garlic. I also wanted the dish to be very easy to size upwards for company. You can do this very easily for every two additional potatoes you use. By the way... My husband told me I had errors in my recipe. To make it absolutely correct preface each of the steps with Make Husband...

I was making this for a lady who just had surgery so I did not want the soup to be too spicy. If you love the heat, add some finely diced jalapeno to bump it up.     We have a family day every other month where everyone brings a dish. When I realized that no one was bringing a vegetable I dug through my pantry and refrigerator and came up with this recipe. It went over really well with everyone... and I come from a very vocal Italian family that feels free to tell you what they liked and didn't like about a dish. The bacon in this dish will not be browned or crunchy but it really gives great flavor to the green beans. Just make sure you dice it and don't use large pieces. I also eliminated a large part of the canning liquid so the 'pot liquor' would have a full-bodied flavor and the beans would not be floating in too much liquid.
