A beautiful creamy dish, "the richness of the risotto is a wonderful balance for the smooth texture of salmon" Rob Feenie.
I also serve this dish with chicken, pork chops, and sometimes add mushrooms, snow peas, baby carrots and just make a meal of it.
This salad came about through years of constantly changing a basic tomato, onion and feta tossed with rice vinegar and "EEVO". (shared with me by a friend visiting from Switzerland.)I am always including fruits of all types in my salads and this has become an instant favorite in our house; the result of a pre-shop fridge sweep!:)

I have had Tomatoes and Zucchini with Parmesan before , which I had on hand, the discovery of the pear that needed to be used and Asiago in the fridge, I figured maybe I could get a little creative. ;)
The combination of flavors and textures were surprisingly enjoyable. Will make this again and ensure I post a picture... nice presentation and no more than 4 mins in the microwave!
