    Bought some leeks and then I thought, "What now?" Here's what happened and now it's a staple item here. If you hate celery, leave it in large sections that you can fish out later.

    I had a pot of lentils and only a vague idea to use them to make soup. Then I took a look at the recipes here for patties and burgers and decided to have a go at it. Per usual, I had this and that on hand and out came this creation. It's GREAT with ketchup and is the closest I've come to having something vegetarian homemade that tasted like my Mom's meatloaf. It makes a fabulous burger too! Substitute curry powder or chili powder for the italian seasoning for a different taste or leave out the italian seasoning altogether for a really plain burger.

    I was drowning in zucchini last year and after looking at several of the Branston pickle recipes here, I came up with a pickle relish of my own. This recipe is in ratio form and can easily be doubled, tripled, or quadrupled. I often make it in a small batch and put it in the fridge where it keeps well for weeks at a time. It is awesome on sandwiches and meats (as a vegetarian, I love it on a veggie and cheese sandwich). I have also given it as gifts. Let me know if you like it too.

    This is a semi-homade version inspired by the other sloppy joe lentil recipes here (thanks, guys!). This is for the 5-6 qt. slow cooker too. Hubby tried it and liked even though he's a carnivore. I made this one afternoon and froze half of the batch for another time. With a 6 qt. slow cooker, you can probably double the recipe easily (I ended up adding extra lentils to the recipe because I used too much water at first...ended up with 1.5lb. lentils and I still had plenty of room in my crock pot).

    I just invented these on a whim because my non-vegetarian husband loved the "Tofu Nut Balls" recipe here, but I was out of the ingredients. This is a bit more like traditional meatballs. I don't work for Boca, but in a small town vegetarian choices are limited to what the Walmart will stock. They even held up to a short simmer in spaghetti sauce once baked. We both loved them! I even saved a few to add to a savory herb gravy for a po-boy. Mmmm...
